I use a BBQ motor and on my wheel it's one rotation per min. I don't know the rpm, but just look it up it works quite well.
If you have more questions just P.M me and I'll try to help you out.

A good speed for a drying wheel is 5-6 RPM. This would be
measured at the speed of the motor, gear box or whatever
the speed of the shaft is turning. The further you get away
from the center of the shaft the faster your bait will turn.
But, it won't go fast enough to hurt anything.
A rotisserie motor is perfect for a drying wheel.

7 rpms will work.
I may be in the minority on this: we turn lures at a slightly higher rate and for a long period of time.
